Elimination Diet: Day 18, A Real Treat!
Praise the Lord for all things sweet and delicious! We had almond truffles today and they were fabulous! After the usual breakfast, I made almond truffles for later in the day. Of course, mom and I had to try one immediately. We were thrilled with how yummy they were, but we restrained ourselves and placed the rest of them in the fridge until later.
Lunch was leftover lentils with kraut and a big salad. We sipped on green smoothies throughout the afternoon. Dinner was collard greens with toasted pepitas (so delicious!) and cinnamon butternut squash. We ended the day with 2 more almond truffles. My dad really enjoyed the truffles too! Success! A delicious, nutritious dessert with no refined sugar!
