Tomatoes for breakfast, lunch and dinner…we began our day with broccoli sprouts, quinoa, tomatoes, and avocado with lime juice and a green smoothie. Not what we typically prefer for breakfast, but it was really good!
I completely forgot to take a picture of lunch, but it was a big salad with a side of lentils and sauerkraut, delicious! For dinner we sautéed red onions, carrots, celery and tomatoes in a little extra virgin olive oil with Herbamare and tossed with quinoa. I love the brightness of the veggies!
We wanted a little special treat for dessert so we made flourless, eggless apple pancakes with maple syrup. It was warm and delicious and smelled and tasted like fall! What a great day!
We are feeling great with the addition of tomatoes. I’m very thankful for no setbacks with the addition of lemons, limes and tomatoes.
