We had the usual breakfast and for a mid-morning snack had a few cashews. They were so delicious, slightly sweet and crunchy! Lunch consisted of a quick sauté of onion, spinach, cranberries and spaghetti squash seasoned with Herbamare. By mid-day I was feeling really great! We had green smoothies to carry us through until dinner. For dinner we had lentil burgers with parsnip fries. We’d never tried parsnips before. They look like white carrots, but we peeled and chopped them, tossed them with a little extra virgin olive oil and seasoned with Herbamare and a little extra garlic then baked them in the oven. They were pretty good, but we think we’ll stick to sweet potato fries in the future! It was really good to try something new, you never know when you’ll discover something you truly enjoy!
