Make lemon lentil soup! This recipe came straight out of the Whole Life Nutrition Cookbook. It was so warming and had a delicious hint of lemon that just made me want to keep eating. The quick preparation was perfect for the busy on-the-go day we had.
We started our day with the usual breakfast, but added a cup of warm water with freshly squeezed lemon juice. We knew that we’d be traveling away from home all day and eating out is just not an option right now, plus, really, where can you ever find very nutritious food when you’re eating out? But that is another subject for another time. Anyway, back to lunch…we packed a salad of romaine, avocado, broccoli sprouts and celery with freshly squeezed lemon juice, a baked sweet potato and a plum.
We also took green smoothies on the road with us to sip throughout the morning. We found a nice bench near a fountain in an out-of-the-way spot to eat lunch. It tasted great and fueled us for the day.
While preparing dinner we had a quick snack of raisins and raw pumpkin seeds. For a late night snack we made cinnamon apples and raisins. Even with a busy day out and about we were able to stick to the plan and reintroduce lemons three times. Neither of us have had a reaction to the lemon, not that we expected to, but we have two more days of lemons and/or limes to make sure there is not a delayed reaction, then it is on to the next thing!
