Everything Green

I love green foods...my body actually craves green foods. Kale, collards, spinach, broccoli...the list goes on...and I can't remember the last time I went more than 24 hours without one of these nutritious power houses on my plate.

Chlorophyll is what makes green plants green. Consuming foods high in chlorophyll can actually darken the skin and protect against sun burn, protect against carcinogens and toxic chemicals, stimulate the repair of damaged tissues, inhibit the growth of bacteria, accelerate wound healing and minimize body odor. Who knew green foods had so many benefits?

This is one of my favorite green meals: Collard wraps with kale chips.





To make the collard leaves pliable, we heat water in a big pot on the stove. Then we dip each leaf in for a few seconds until it is softened and wrappable. The filling is created by peeling and dicing a sweet potato, massaging it with a little extra virgin coconut oil and baking in a 400 degree oven for about 20 minutes. We use a can of aduki beans (they are super tiny and easy to digest), drained and rinsed. Once the potatoes are cooked, we stir them together with the aduki beans, add a chopped avocado and season with Herbamare. Then we place a couple of spoonfuls into a collard leaf, starting at the stem end, folding up and pulling the sides in. I'm getting hungry just thinking about it now!



The kale chips are incredibly light and airy with a slight crisp. With only 4 ingredients, they are also really quick and easy to make.

1 bunch kale, chopped
1 Tbsp. lemon juice, fresh squeezed
2 Tbsp. grapeseed oil
1/4 tsp. Celtic sea salt

Massage kale with lemon juice, grapeseed oil and salt. Spread kale onto a parchment paper lined baking sheet and bake at 400 degrees for about 15-20 minutes. Enjoy a yummy nutritious snack!
